From Soil to Cane
It all begins here — in the lush highlands of Rio das Flores, Brazil, where our organic sugarcane grows surrounded by clean mountain air and pure spring water.

Once harvested, the stalks are pressed to extract the pure juice that becomes the base of 5th Haven Cachaça. Nothing is wasted — the crushed stalks, known as bagasse, are dried and reused as the renewable fuel that powers our copper alembic stills.
Transformation & Tradition
In small open vats, our sugarcane juice begins to ferment naturally with wild yeast found in the air and on the cane itself. The process is slow, patient, and untouched by chemicals — letting nature define the flavor.

Once fermentation is complete, the fresh cane juice is distilled in a handcrafted copper alembic still heated entirely by sugarcane bagasse. The distillation is divided into three parts — each with a purpose:
HEAD
First vapors: Repurposed for cleaning and sanitizing the distillery.
HEART
The pure, balanced middle: This becomes 5th Haven Cachaça.
TAIL
Final heavier vapors:
Returned to the fields as organic fertilizer.
The heart cut rests in Jequitibá wood, a native Brazilian tree that gently refines without overpowering the spirit — preserving its freshness while rounding its edges.
